You'll notice an incredible flavor in all of our duck, and the liver is no exception: rich, earthy, bright, meaty, never greasy or tired. Try these duck livers mixed with onions, egg and duck fat for a delightful shmear. Our pastured ducks are carefully raised by our network of poultry farmers in the mid-Atlantic, where they graze freely and have ample access to fresh water for bathing. Their diet includes GMO-free grain, plus grasses and legumes foraged from the pasture. They are never fed any hormones, antibiotics or animal by-products.
Raw liver must be kashered by broiling. Click here for instructions from the Star K. Once kashered, liver can be made into chopped liver, added to salads or sauteed with mushrooms and pasta.
