To make a flavorful duck stock without using a whole bird, we recommend a combination of duck bones, necks and wings. Plan on 4-8lbs per batch (depending on the size of your pot!). Duck necks are incredibly rich and flavorful and, if you don't mind the bones, make a great dish all on their own. We grow our pastured ducks in the mid-Atlantic, where they graze freely and have ample access to fresh water for bathing. Their diet includes GMO-free grain, plus grasses and legumes foraged from the pasture. They are never fed any hormones, antibiotics or animal by-products, and the result is a delicious, fresh, rich and earthy tasting meat you'll greatly enjoy.
