We've cleaned these gizzards and they are ready for you to transform them into a rich sauce that your guests will be talking about for months, or use to boost flavor in your turkey soup. Gizzards are sold by weight and can vary in size considerably, but you can asssume approximately 2-4 gizzards per pound.
