Our artisan Marble & Grain butchers love to craft this supremely elegant roast from our milk-fed, Pennsylvania-raised veal. With its carefully Frenched bones and tender, pale pink meat, it's a showstopper on the way into the oven as well as coming out. Season this roast with salt, pepper; give it a blast of high heat, then lower the temp and continue to cook until the internal temp reaches 130F for medium rare. Cut between the bones to serve at the table.
